Soki, tebichi, sanmainiku: a field guide to the toppings

The menu at a soba shop is short — five or six lines — but each line is a different animal part, a different texture, a different philosophy. Here's how to read it, and how to order the bowl you actually want.

Soki: one word, two very different ribs

Soki means pork ribs — the name is said to come from an old word for "comb," after the way the rib rack looks. But order "soki soba" around the island and you'll meet two distinct creatures, and knowing the difference is the single most useful trick on the menu:

Hon-soki — the true rib

Spare ribs on the hard bone. The meat slips off with chopsticks; the bone itself stays behind (shops often give you a spare dish for it). Meatier, more structured — the carnivore's choice.

軟骨ソーキ

Nankotsu soki — the soft bone

Rib with cartilage instead of hard bone, simmered until the cartilage itself turns tender and edible. Melting, collagen-rich, nothing left on the plate — the more common style at many shops.

The rest of the menu

Sanmainiku三枚肉

"Three-layer meat" — pork belly, its strata of skin, fat, and lean glazed in soy and a little sugar. The default topping of the classic bowl: softer-spoken than soki, and the traditional taste of celebration food made daily.

Tebichiてびち

Pig's trotters simmered until the skin and tendon turn to a trembling, collagen-rich softness. Locals treat it as comfort food and beauty food in equal measure. Order it once for the story; many visitors come back for seconds.

Kamabokoかまぼこ

The slice of fish cake riding on nearly every bowl — Okinawa has its own kamaboko tradition, and the pink-rimmed slice is part of the bowl's visual signature.

Yushi-dofuゆし豆腐

Not a meat at all: a cloud of warm, barely-set island tofu, served as its own gentle style of soba. The bowl to order the morning after too much awamori.

Beni shoga & friends紅生姜

Red pickled ginger cuts the pork's richness; scallions freshen; koregusu waits on the table for the second half of the bowl.

The classic bowl says tradition. Soki says appetite. Tebichi says trust me, I've been here before.
